Color of cygnet = sex of cygnet? Age of pinioning

Does the coloration of mute swan cygnets indicate the sex? We have some white and some grey ones and I wondered which was which. Also, I understand that cygnets need to be pinioned at between 1-3 weeks of age. Can it also be done later to an older cygnet? Thank you. Catherine Wiles
