Hi Rachel:

Swans, geese and some other waterfowl are grazing animals. The birds will eat grasses as well as left-over grains or other such crops that farmers have picked over. During the winter migration, aquatic and other vegetation becomes very scarce. Once the swans return, they will use such fields as temporary stop-overs and will supplement their aquatic vegetation from the fields until spring time returns as well as the aquatic vegetation.
