Can I stroke swans? Do they need a shelter in winter?

I have a pair of pinioned mute swans in france. They feed on aquatic plants, grass etc and I also feed them with maize which they love and they come close to me to get fed. I was wondering if I can touch or stroke them later. They do come up to me quite close when I call them. Is there a book that I can get to teach them?
Also do you know if I need to build a house or float for them in winter. I know that they sleep in the water. I have also a few ducks which sit on little stone island (man made) . Will the swans chase them away in winter. At the moment, I have not seen the swan go up as it is difficult for them to go up the island.Please advise.
